Recipe Box: Healthy Summer Salad

   I don't know about everyone else, but when it comes to me, I am the salad girl, I always have to have a salad when I go out, or simply have one at home.  I am a simple salad girl, not a glam type of girl.  Summer has not been so hot this year. Personally, I like it. I am not mad about the cooler weather. It is the only thing that I like to make during the summer because I don't need a stove, make the healthy summer salad that I absolutely love and it smothers in Italian dressing that tastes good,  it is smooth, it keeps me cool in the summer. The question is, why must I choose this summer, What is so great about it? Why do I think this salad taste so good? Why not give the other salads a chance? To be truthful, I don't just stick to this salad, I try multiple. Sometimes I like to keep my options open because I don't know what I am missing.

    So when it comes to summer, there are so many things that you can do to this salad to make sure you love it on your own. There is one thing for sure, I hope you like Italian dressing, because to me it is the dressing of summer. When you decide to make this Salad, please used one thing, please make it the way you want to and with the things you love. Not everyone likes the same things, and I know I don't, one thing about me, I don't like meat in my salads. I like all veggies. Let me tell you how I created my Healthy Summer Salad.

1/2 cup Light Lettuce ( Small Chunks)
1/2 cup Mushrooms ( chopped)
1/2 cup Sugar  Snap Peas 
1/2 cup Onions ( chopped)
1/2 cup Tomatoes (dice) 

1/2 Black Olives 

1/2 Cucumber (chopped)

1/2 Red peppers (chopped) 

3 tablespoons of Italian dressing

Last but not least, Mixed all of it in a mixing bowl and add your Italian dressing, I want to say 3 tablespoons, but we all are different. So you can put in as much as needed. When mixing your ingredients together, just remember, that the 1/2 cup will make a serving of 2 people. So if you are eating for one, try to measure it according to you and what you would eat. (Hint: if you do follow these instructions, just remember you don't have to add the Dressing if you are splitting the salad, for one for lunch and one for dinner, just add as you eat, not before, because it tends to get soggy after it been sitting for too long.)
